Parmesan Chicken Creme Over Wild Rice


I was addicted to this for almost two years. It was what I thought of every time I was hungry. It is easy, but tastes like it was hard to make.
Sometime earlier, bake 4 chicken breasts for 45-50 minutes at 350'
Cool and dice
Sautee' in lg. skillet in 4 TBSP butter:

Red Onion, Garlic, Celery and Red Pepper (all diced)
**You won't believe how good this smells already
Add: 1 Can Chicken Broth (8 oz)
2 Cups Heavy Cream
1- 8 0z. Philly Cream Cheese (softened)
2 Cups Parmesan Cheese
Mix well
Simmer this, for about 1/2 hour. If it gets to thick, add more cream
Spoon it over Uncle Bens Wild Rice
